This Roasted Salmon recipe is my Monday night go-to for exactly that reason — it's packed with protein, takes just 20 minutes from frozen to finished, and requires almost no prep. Whether you're juggling back-to-back meetings or wrapping up a long day, this simple salmon dish will have you feeling nourished and accomplished. All you need is a broiler-safe pan and a few pantry staples to get dinner on the table, fast.

Roasted Atlantic Salmon
Ingredients
2 – 4 oz Atlantic salmon fillets (I use Whole Foods Frozen Atlantic salmon)
2 tsp avocado oil
2 tsp seasoning (any kind, switch it up!)
Directions
Turn oven on broil (high if you like crispy, otherwise use low)
Add salmon fillets to a broiler-safe pan
Brush each fillet with 1 tsp avocado oil
Add 1 tsp seasoning to each fillet, brush to evenly distribute
Cook fillets for 16 min
