Warm Zucchini & Hummus Bowl (Protein-Ready!)

Looking for a quick, nourishing meal that feels fresh and comforting at the same time? This Warm Zucchini & Hummus Bowl is a 15-minute fix that’s bursting with Mediterranean flavor—and it’s easy to top with your favorite protein. I often use canned sardines (hello, omega-3s!) or my go-to roasted salmon recipe—which I shared in a recent blog post!


This bowl layers creamy hummus, sautéed zucchini, salty olives, and crunchy seeds for a satisfying meal that hits all the right notes—no reheating necessary if you’ve prepped ahead.





Ingredients


  • 2 tbsp olive oil

  • 1 lb zucchini, sliced or chopped

  • 8 oz hummus (use your favorite brand or homemade)

  • ¼ cup Kalamata olives, pitted and halved

  • ¼ cup fat-free feta

  • ¼ cup toasted sunflower seeds

  • 2 tbsp fresh or dried oregano

  • 1 tsp lemon juice

Optional: canned sardines or roasted salmon for protein



Directions

  1. Sauté the Zucchini – Heat olive oil in a skillet over medium heat. Add chopped zucchini and cook for 5–7 minutes, until just tender and lightly golden.

  2. Prepare the Base – Spread a generous layer of hummus on a plate or in a shallow bowl.

  3. Assemble the Bowl – Top the hummus with warm zucchini, olives, feta, sunflower seeds, and oregano. Finish with a drizzle of lemon juice.

  4. Add Protein – For a more filling meal, top with sardines or roasted salmon. Both add healthy fats and a satisfying flavor boost.
